Today's lunch was soooo good. On the right is leftover curried red lentil soup with red potatoes, kale, tomatoes, carrots, curry, cumin, and garam masala (modified version of Liz's recipe here). On the left is a grilled avocado and white-bean spread sandwich. The whole-wheat flatbread (available at Costco) is only 110 calories per piece, each of which makes a fantastic sandwich - a nice way to cut the calories (vs. 2 pieces of regular bread).
